This cookie recipe is my weekly go to if I want to create a treat. It is a modified version of a recipe I found on www.cavemanstrong.com. What I love about this recipe is that there is no added sweetener...the banana is the sweetener. The chocolate chips of course have sugar but you can alway opt for ones sweetened with stevia. I also like the fact that there's lots of healthy fat that helps keep the blood sugar a bit more stable.
- 1/3 cup coconut flour
- 1/2 teaspoon baking soda
- 8 tablespoons refined coconut oil
- 2 large eggs
- 1 very ripe banana (large) or 1 1/2 small
- 1 1/2 teaspoons vanilla (liquid or ground vanilla)
- 1/2 cup dark chocolate chips
- 1/4 cup coconut flakes
In a medium bowl mix the coconut flour and the baking soda together.
In a separate bowl mix the coconut oil, banana, eggs, and vanilla
Mix the dry ingredients with the wet.
Add the chocolate chips and coconut flakes. Scoop cookie batter (1 1/2 inch) on a parchment paper lined cookie sheet.
Bake at 350 for 12 minutes.
